Ingredients:
- 1 envelope or 1 tablespoon of dry biological yeast

- 1 egg
- 2 teaspoons salt
- 2 tablespoons of sugar
- 1 cup of warm milk (240 ml)
- 2 cups of purple sweet potato pulp (350 g)
- 600 g of wheat flour (approximately 3 ½ cups)
- 40 g unsalted butter (2 shallow tablespoons)
- Wheat flour for sprinkling
Preparation mode:
- Cook the sweet potatoes with the skin until very tender. Peel and knead;
- Mix the yeast with water and let it rest for 5 minutes;
- Beat the hydrated yeast, egg, salt, sugar and milk in a blender. Beat well and gradually add the sweet potato, beating. until a thick cream is left;
- In a bowl, put this mixture and gradually add the wheat flour, mixing with a spoon or with your hands;
- Continue adding flour until the dough does not stick to your hands;
- Add the butter and mix well, until the dough is smooth and shiny;
- Cover with plastic film and let it rest until the dough doubles in size;
- Divide the dough into 3 pieces and shape the breads on a floured surface;
- Place the loaves in a greased pan without touching each other;
- Place in a preheated oven at high temperature for 10 minutes, lowering to a medium oven and baking for another 45 minutes or until the dough is golden brown. If you want to make smaller breads, the cooking time should be shorter.
How to consume
To obtain its slimming effect, you should consume up to 2 purple breads per day, replacing ordinary white bread. As a filling, you can use unsalted butter, ricotta cream, light cream cheese or a slice of cheese, preferably white cheeses, such as cottage ricotta or minas frescal light cheese.
